- 3 medium eggplants
- 2 tablespoons mayonnaise
- 1/2 small onion
- 2 cloves garlic
- salt to taste
Preparation time: less than 60 minutes
RECIPE PREPARATION Eggplant salad with mayonnaise:
1. Bake the eggplants and when they are ready, take them out and leave them covered for a few minutes in a bowl.
2. Meanwhile, clean and grind the onion and garlic (I grated the onion).
3. Peel the eggplants and leave them for a few minutes and then chop them and add the onion, garlic, mayonnaise and salt.
4. Mix well and refrigerate
With homemade mayonnaise, the salad comes out tastier. I bought it (out of convenience).
Sometimes I put boiled potatoes given by grater.
