  1. Blend the vinegar, garlic, ginger, salt, cayenne, coriander, cumin and oil in a blender until you have a thick paste. Brush the fish chunks with the mixture to coat evenly and place in a shallow dish; pour the remaining marinade over the fish. Allow to marinate in refrigerator at least 4 hours.
  2. Preheat the oven grill. Arrange the marinated fish in an oven-proof dish, reserving the marinade.
  3. Grill the fish on the oven's centre rack for 10 minutes; turn and brush with reserved marinade. Continue cooking until the fish flakes easily with a fork, about 7 minutes more. Serve hot.

Ingredients used in Tandoori Fish

&bull White fish fillets (cut into 2" * 3" pieces) - 2 lbs.
&bull Vinegar - (1/3) cup.
&bull Chopped fresh ginger - 1 tablespoon.
&bull Chopped garlic cloves - 4 number.
&bull Ground cayenne pepper - 1 tablespoon.
&bull Ground coriander seeds - 1 tablespoon.
&bull Ground cumin seeds - 1 tablespoon.
&bull Oil - as required.
&bull Salt - to taste.

Method:

  • Make a paste of the vinegar, chopped ginger, garlic, grounded coriander, cumin, cayenne pepper, salt and oil in a blender.
  • Marinate the fish pieces in the paste for 4 hours in the refrigerator.
  • Turn the oven on to broil at the highest point.
  • Place the fish pieces on a baking tray and broil for about 10 minutes.
  • Turnover on the other side and broil for about 7 minutes again.

Note: Broiling time may differ depending on the thickness of the fillets.
